The recipe glutenfree lactosefree low FODMAP fudge was developed after I let the caramel sauce simmer too long. Voila, a new recipe! If you can tolerate coffee I suggest you eat these sweet treats with a cup of coffee. Enjoy!

Glutenfree lactosefree low FODMAP fudge

200 g. /7 oz. lactosefree full cream

60 g. /2,1 oz. sugar


Put the sugar in a casserolle and melt it until it has become brown. Pour the full cream into the sugarblend and whisk while you wait for the cream to simmer. Let it simmer for 15-20 min. or until it has become thick.

When the caramel has become thick and creamy, put it in a rectangulare tin without bottom (I think mine was 12*12 cm.) and in the refridgerator. When the fudge has cooled down, gently push it out of the tin and cut it into pieces. Keep the fudge in an airtight box in the refridgerator.

I used some salty peanuts in my caramel. Put a tablespoon with chopped peanuts into the caramel before you put it into the tin.
