I’ve never tasted velvet before, but I can imagine that this glutenfree, low FODMAP cake tastes quite similar!
I made this recipe when we were in China (husband lived there for a year while I was in Norway visiting him every now and then). We didn’t have many ingredients, but we had eggs, sugar and chocolate (brought from Norway).
To make this low FODMAP velvet chocolate cake you need:
200 g./7 oz. dark chocolate*
240 g./8,5 oz. butter**
200 g./7 oz. sugar
50 g./1,7 oz. gluten free flour
Preheat the oven to 200°C/390°F.
Melt the butter and put the chocolate in the warm butter. Whisk the eggwhites, whisk in the sugar and add the eggyolks. Whisk some more and fold in the glutenfree flour. Add the chocolate and butter mixture.
Put the batter in a small baking tray and bake for 15-20 minutes.
Serve with whipped lactosefree cream and enjoy! Mmmmmm…..
*About chocolate: use a dark, lactosefree chocolate. If you use 70% cocoa, you might need some more sugar!
**You don’t need lactosefree butter as butter is naturally close to lactosefree.
