The worlds best cake is one of the most populare Norwegian cakes. It’s also one of my favorites and always a hit to bring to a party. It’s impossible to taste that it’s “allergy-friendly” and people love it.
To make the worlds best cake you will need:
The bottom you will need:
125 g./4,5 oz. sugar
125 g./4,5 oz. butter
5 egg yolks
100 g./3,5 oz. glutenfree flourblend
1.5 tsp. baking soda
5 tbsp. lactosefree milk
For the meringue, you need:
5 egg whites 175 g.
Sugar 50-75 g.
Chopped almonds (if you can tolerate)
For the filling you need:
around 300 g./10,5 oz. lactosefree whipping cream
Preheat the oven to 175 degrees.
Make the bottom:
Make a cream of butter and sugar. Add the egg yolks little by little while continuing to whisk. Mix the baking powder with the flour and stir it into the batter. Finally add the milk. Smear the batter over a baking sheet covered roasting pan.
Make the meringue:
Whisk the egg whites until they have stiffend, add the sugar and egg whisk until the meringue has become smooth and shiny. Add the meringue on the bottom and sprinkle almonds over the meringue.
Bake for 25 minutes.
When the cake is completely cold divide it in half.
Make the filling:
Whisk the cream and blend it with the vanilla custard. Add the filling on one part and put the second part on the top.
